Ingredients

  • 2tablespoonsolive oil

  • 2onions, chopped

  • 4clovesgarlic, minced

  • 4cooked, boneless chicken breast half, chopped

  • 3(14.5 ounce) canschicken broth

  • 2(4 ounce) canscanned green chile peppers, chopped

  • 2teaspoonsground cumin

  • 2teaspoonsdried oregano

  • 1 ½teaspoonscayenne pepper

  • 5(14.5 ounce) cansgreat Northern beans, undrained

  • 1cupshredded Monterey Jack cheese

Cooking Directions

  1. Heat oil in a large pot over medium heat. Add onions and garlic; cook and stir until onions are tender, about 10 minutes.

  2. Stir in chicken, broth, green chile peppers, cumin, oregano, and cayenne pepper; bring to a boil.

  3. Reduce heat to low; add beans and simmer, stirring occasionally, until thoroughly heated, about 20 to 30 minutes.
