Ingredients

  • ½cupheavy cream

  • 2largeegg yolks, beaten

  • ¼cupbutter or margarine

  • 2tablespoonsdry sherry or madeira

  • ½teaspoonsalt

  • 1pinchcayenne pepper

  • 1pinchground nutmeg

  • ¾poundcooked lobster meat, broken into chunks

Cooking Directions

  1. Whisk cream and egg yolks together in a small bowl until well blended.

  2. Melt butter in a saucepan over low heat. Stir in cream mixture and sherry; cook, stirring constantly, until mixture thickens, 5 to 8 minutes; do not boil.

  3. Remove from the heat and season with salt, cayenne, and nutmeg. Stir in lobster.

  4. Return to the stove and cook gently over low heat until heated through, about 5 minutes. Serve hot.
