Ingredients

  • ½poundsweet Italian pork sausage, cut into 1/2-inch slices

  • 1largeonion, chopped

  • 1stalkcelery, finely chopped

  • 1tablespoonchopped garlic

  • 8cupswater

  • 2(14.5 ounce) canschicken broth

  • 1(28 ounce) candiced tomatoes

  • 1(16 ounce) packagedry lentils, rinsed

  • 1cupshredded carrot

  • 1tablespoongarlic powder

  • 1tablespoonchopped fresh parsley

  • 1tablespoonsalt, or to taste

  • ½teaspoonblack pepper

  • ½teaspoondried oregano

  • ¼teaspoondried thyme

  • ¼teaspoondried basil

  • 2largebay leaves

  • ½poundditalini pasta (Optional)

Cooking Directions

  1. Cook sausage in a large pot over medium-high heat until evenly brown, 7 to 10 minutes. Add onion, celery, and garlic; sauté until tender and translucent, about 5 minutes. Stir in water, chicken broth, tomatoes, lentils, carrot, garlic powder, parsley, salt, pepper, oregano, thyme, basil, and bay leaves; bring to a boil. Reduce the heat, cover, and simmer until lentils are tender, 2 1/2 to 3 hours.

  2. Stir in pasta and cook until tender, 15 to 20 minutes. Remove bay leaves before serving.
