Ingredients

  • 1tomato, chopped

  • 1cucumber, seeded and chopped

  • ¼cupthinly sliced red onion

  • ¼cupcanned kidney beans, drained

  • ¼cupdiced firm tofu

  • 2tablespoonschopped fresh basil

  • ¼cupbalsamic vinaigrette salad dressing

  • salt and pepper to taste

Cooking Directions

  1. Combine tomato, cucumber, red onion, kidney beans, tofu, and basil in a large bowl.

  2. Toss with balsamic vinaigrette salad dressing and season with salt and pepper just before serving.
