Ingredients

  • 1(16 ounce) canstewed tomatoes, drained and sliced

  • 1(8.75 ounce) canwhole kernel corn, drained

  • 1mediumcucumber, chopped

  • 1green bell pepper, chopped

  • 1red bell pepper, chopped

  • 2tablespoonsred wine vinegar

  • 1tablespooncrushed red pepper flakes or to taste

  • ½teaspoongarlic, minced

  • ½teaspooncumin

  • ¼teaspoondried cilantro

  • ¼teaspoonsalt

  • teaspoonground black pepper

Cooking Directions

  1. Place tomatoes, corn, cucumber, green bell pepper, red bell pepper, and red wine vinegar in a large bowl. Stir in crushed red pepper flakes, garlic, cumin, cilantro, salt, and black pepper. Cover and chill for at least 30 minutes before serving.
