Ingredients

  • nonstick cooking spray

  • 1eggplant, sliced into 1/2-inch rounds

  • 1tomato, sliced

  • ¼cupgrated fat-free Parmesan cheese

Cooking Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Spray a baking sheet with nonstick spray.

  2. Arrange eggplant rounds on the prepared baking sheet and sprinkle with 1/2 of the Parmesan. Layer one tomato slice over each eggplant round, then sprinkle with remaining Parmesan.

  3. Bake in the preheated oven for 10 to 15 minutes.
