Ingredients

  • 2cupsdry pancake mix

  • 1teaspoonground cinnamon

  • 2largeeggs

  • 1cupapplesauce

  • 1teaspoonlemon juice

  • ½cupmilk

Cooking Directions

  1. Stir pancake mix and cinnamon together in a large bowl; make a well in the center and add eggs, applesauce, lemon juice and milk. Stir mixture until smooth.

  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake; cook until bubbles form and the edges are dry, 1 to 2 minutes. Flip and cook until browned on the other side.
