Ingredients

  • 2poundsrusset potatoes

  • 1cupmayonnaise

  • 4teaspoonssweet pickle relish

  • 4teaspoonswhite sugar

  • 2teaspoonschopped white onion

  • 2teaspoonsprepared mustard

  • 1teaspoonwhite wine vinegar

  • 1tablespoonminced celery

  • 1teaspoonminced pimento

  • ½teaspoonshredded carrot

  • ¼teaspoondried parsley

  • ¼teaspoonground black pepper

  • salt to taste

Cooking Directions

  1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, and chop.

  2. In a large bowl, combine potatoes, mayonnaise, sweet pickle relish, sugar, onion, mustard, vinegar, celery, pimentos, carrot, parsley, pepper, and salt. Mix well, chill and serve.
