Ingredients

  • 8eggs, beaten

  • 3tablespoonsmilk, or more to taste

  • ¼teaspoonseasoned salt (such as Season-All)

  • salt and ground black pepper to taste

  • 1tablespoon olive oil, or more as needed

  • 1jalapeño pepper, seeded and minced

  • ½cupchopped applewood-smoked ham deli slices

  • 1cupfinely shredded Cheddar cheese, divided

Cooking Directions

  1. Whisk eggs, milk, seasoned salt, salt, and black pepper together in a bowl.

  2. Heat oil in a large nonstick skillet over medium-high heat. Add jalapeño and sauté until slightly softened, 2 to 3 minutes. Add ham and cook until heated through, about 1 minute.

  3. Pour egg mixture into the skillet. Cook and stir until eggs are set but not dry, 3 to 5 minutes. Sprinkle 1/2 of the Cheddar over eggs; cook and stir until cheese is melted. Transfer eggs to a plate and sprinkle remaining Cheddar over the top.
