Ingredients

  • 2large oranges, peeled and cut into chunks

  • 1mediumtomato, seeded and diced

  • ½cupminced red onion

  • ¼mediumjalapeno pepper, minced

  • 1tablespoonapple juice

  • 1teaspoongrated orange zest

  • 1teaspoonminced garlic

  • ½teaspoonminced fresh ginger root

  • 1pinchsalt

  • 1tablespoonchopped fresh cilantro

Cooking Directions

  1. Combine oranges, tomato, onion, jalapeño, apple juice, orange zest, garlic, ginger, and salt in a bowl; toss to combine. Cover and refrigerate until chilled, about 30 minutes. Stir in cilantro before serving.
