I use this Jamaican jerk dry rub to season chicken before grilling, but you also can use it on fish, steak, or just about anything else. You may want to give some away to friends because this recipe makes a lot!

Ingredients

  • 8cupssalt

  • 5 ½cupsgarlic powder

  • 4cupswhite sugar

  • 4cupscayenne pepper

  • 2cupsdried thyme leaves

  • 2cupsground black pepper

  • 1 ½cupsallspice

  • 1cupground cinnamon

  • 1cupchipotle chile powder

  • ½cupground cloves

Cooking Directions

  1. Mix salt, garlic powder, sugar, cayenne pepper, thyme, black pepper, allspice, cinnamon, chile powder, and cloves together in a 10-quart mixing bowl until well combined. Transfer to smaller airtight containers.
