Ingredients

  • 1cupfresh green beans, trimmed and snapped

  • 1cupfresh wax beans, trimmed and snapped

  • 1cupdiced carrot

  • 1cupdiced turnip

  • 4cupswater, or as needed to cover

  • ¼teaspoonsalt, or to taste

  • 2cupscubed new potatoes

  • ½cupheavy cream (Optional)

  • 6tablespoonsbutter

  • ½cupwater

  • 1tablespoonall-purpose flour

Cooking Directions

  1. Combine green beans, wax beans, carrots, and turnip in a stockpot; add water to cover. Stir in salt and bring to a boil. Reduce the heat and simmer for 30 minutes.

  2. Add potatoes and simmer until tender, about 30 more minutes. Stir in cream and butter.

  3. Whisk 1/2 cup water and flour together in a small bowl; mix into soup and cook until thickened, 3 to 5 minutes.
