Ingredients

  • 1(16 ounce) packagepenne pasta

  • ¾poundsliced pepperoni sausage

  • 2tablespoonsminced shallots

  • 1clovegarlic, minced

  • 4medium tomato – peeled, seeded and chopped

  • 1cupheavy whipping cream

  • ¼cupchopped fresh parsley

  • 2tablespoonsgrated Parmesan cheese

Cooking Directions

  1. Cook penne according to the package directions.

  2. In a large skillet, sauté pepperoni until crispy, 5 to 8 minutes. Drain all but 1 tablespoon grease.

  3. Add shallot and garlic to grease in the skillet. Cook until translucent. Stir in tomatoes and simmer for about 3 minutes.

  4. Stir in cream and cook until reduced, about 8 minutes. Add parsley and remove from heat.

  5. Add pasta and toss. Garnish with Parmesan cheese.
