Ingredients

  • 6slicesbacon, chopped

  • 3tablespoonsbutter

  • 1red onion, chopped

  • 2poundsfresh green beans, trimmed and snapped

  • 8smallnew potatoes, diced

  • 1large clovegarlic, minced

  • ¼cupchicken broth

  • 1 ½teaspoonswhite balsamic vinegar

  • salt and pepper to taste

Cooking Directions

  1. Cook chopped bacon in a skillet over medium heat, stirring occasionally, until evenly browned, 8 to 10 minutes. Drain bacon pieces on a paper towel-lined plate.

  2. Melt butter in a skillet with a lid over medium-low heat. Add onion; cook and stir until onion is translucent, about 5 minutes. Stir in cooked bacon, green beans, potatoes, garlic, and chicken broth. Bring to a boil, cover, and simmer over low heat until green beans are tender, about 10 minutes.

  3. Sprinkle with vinegar, salt, and pepper; serve.
