Ingredients

  • 1tablespoonvegetable oil, for frying

  • 2small (4 inch)pita breads, torn into pieces

  • 1largeEnglish cucumber, finely diced

  • 3cupshalved grape tomatoes

  • ¾cupchopped Italian parsley

  • ¾cupchopped fresh mint

  • ½red onion, finely diced

  • 2tablespoonsextra-virgin olive oil, or to taste

  • 1tablespoonfresh lemon juice, or to taste

  • 1teaspoonground sumac, or to taste

  • 1clovegarlic, crushed, or more to taste

  • kosher salt and freshly ground black pepper to taste

  • 1ouncesheep’s milk feta cheese

Cooking Directions

  1. Heat oil in a large skillet over medium-high heat. Working in batches, fry pita pieces in hot oil until golden brown on both sides. Blot dry with paper towels and set aside.

  2. Combine cucumber, tomatoes, parsley, mint, red onion, olive oil, lemon juice, sumac, garlic, kosher salt, and ground black pepper in a large serving bowl. Gently toss salad with fried pita pieces. Grate feta cheese on top using a small cheese grater to serve.
