Ingredients

  • 1tablespoonvegetable oil

  • 8ouncesbulk Italian sausage

  • 1potato, peeled and diced

  • ¼onion, chopped

  • 1cupfrozen mixed vegetables

  • salt and pepper to taste

  • ¼cupshredded Cheddar cheese

Cooking Directions

  1. Heat oil in a large skillet over medium heat. Cook and stir sausage in hot oil until crumbly and just slightly pink, about 5 minutes. Add potato and onion; cook, stirring occasionally, until potatoes are tender and lightly browned, 10 to 15 minutes.

  2. Stir in frozen vegetables and cook until heated through. Season with salt and pepper. Sprinkle with Cheddar cheese to serve.
