Ingredients

  • 1(16 ounce) canspicy chili beans

  • 1(10 ounce) candiced tomatoes and green chiles (such as RO*TEL® Mexican Lime & Cilantro)

  • 1(8 ounce) packageshredded sharp Cheddar cheese

  • 1(8 ounce) containersour cream

  • ¼cupfinely chopped cilantro

  • 3stalksgreen onions, thinly sliced

  • 1mediumjalapeno pepper, seeded and chopped

  • ¾teaspoonchili powder

  • ½teaspoonkosher salt

Cooking Directions

  1. Pour chili beans and diced tomatoes and green chiles into a strainer to drain; do not rinse. Transfer to a medium bowl.

  2. Stir in Cheddar cheese, sour cream, cilantro, green onions, jalapeno, chili powder, and salt until combined. Cover and refrigerate for at least 1 hour or overnight before serving.

  3. Give it a stir before serving.

Cook’s Note:

Any flavor RO*TEL(R) will do, but the lime and cilantro flavor adds a nice zip!
