  • 4(15 ounce) cansblack beans, rinsed and drained

  • 1(16 ounce) packagefrozen corn, thawed

  • 1yellow bell pepper, diced

  • 1orange bell pepper, diced

  • 1green bell pepper, diced

  • cupolive oil

  • ¼red onion, finely chopped

  • 2tablespoonsred wine vinegar

  • 2tablespoonsbalsamic vinegar

  • 2tablespoonsapple cider vinegar

  • 1tablespoonminced garlic

  • 1tablespoonchopped fresh cilantro

  • 1teaspoonsalt

  • 1teaspoonground cumin

  • ¼teaspoonhot sauce, or to taste

Cooking Directions

  1. Stir black beans, corn, yellow, orange, and green bell pepper, olive oil, red onion, red wine vinegar, balsamic vinegar, apple cider vinegar, garlic, cilantro, salt, cumin, and hot sauce together in a non-reactive container. Chill in the refrigerator overnight.
