Ingredients

  • 7mediumtomatoes, cut into 1/4-inch dice

  • 2cupschopped fresh cilantro

  • 1largered onion, cut into 1/4-inch dice

  • 2mediumjalapeno peppers, seeded and minced

  • 2tablespoonslime juice

  • 2tablespoonssalt

  • 1tablespoonground black pepper

  • 1tablespoonminced garlic

  • ½cupdistilled white vinegar

  • ½cupvegetable oil

Cooking Directions

  1. Combine tomatoes, cilantro, red onion, cilantro, jalapeños, lime juice, salt, pepper, and garlic in a large mixing bowl. Pour in vinegar and vegetable oil, and gently mix to combine. Cover and refrigerate for 1 hour before serving.
