Ingredients

  • 8largeIdaho® Gold Potatoes

  • ½cupsoft butter

  • ½cupshredded Parmesan cheese

  • 1 ½cupsbuttermilk

  • 1cupheavy cream, or more to taste

  • 1bunchflat leaf parsley, roughly chopped

  • 1teaspoonkosher salt

Cooking Directions

  1. Slice all potatoes in half, place in a large pan, and cover with cool water.

  2. Bring to a boil for 25 to 35 minutes or until potatoes are tender enough to mash.

  3. Drain water and add remaining ingredients. The parsley cooks slightly with the heat of the potatoes.

  4. Mash by hand or with a hand mixer; season to taste with salt.

Cook’s Note:

You can add up to 2 cups of heavy cream to the mashed potatoes for extra creaminess.
