Ingredients

  • 2(15.5 ounce) cansgarbanzo beans, drained

  • ½cupwater

  • ¼cuptahini (sesame-seed paste)

  • ¼cupfresh lemon juice

  • 2tablespoonsolive oil

  • 1canned chipotle pepper in adobo sauce

  • 2clovesgarlic

  • 1 ½teaspoonscumin

  • 1(7 ounce) jarroasted red bell peppers, drained

  • ½cupchopped cilantro

  • 6oil-packed sun-dried tomatoes, drained

  • ½teaspoonsalt

  • ground black pepper to taste

Cooking Directions

  1. Blend garbanzo beans, water, tahini, lemon juice, olive oil, chipotle pepper, garlic, and cumin in a food processor until smooth. Add red peppers, cilantro, sun-dried tomatoes, salt, and pepper; pulse to coarsely chop and blend. Transfer to a serving bowl.
