Ingredients

  • 2cupslight brown sugar

  • 2cupswhite sugar

  • 2teaspoonsvanilla extract

  • 2cupsvegetable oil

  • 4largeeggs

  • 4cupsall-purpose flour

  • 1 ½cupsquick cooking oats

  • 2teaspoonsbaking soda

  • 1teaspoonsalt

  • 4cupscornflakes cereal

  • 1cupchopped pecans (Optional)

  • 1cupflaked coconut (Optional)

Cooking Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Cream brown sugar, white sugar, oil, eggs, and vanilla together in a large bowl. Add flour, oats, baking soda, and salt. Mix well. Stir in cornflakes, pecans, and coconut.

  3. Drop by rounded tablespoonfuls onto an ungreased cookie sheet.

  4. Bake in the preheated oven for 8 to 10 minutes.

Tips

Makes 10 dozen (2-inch) cookies. Caution: Halve this recipe if you don’t want a ton of cookies.
