Ingredients

  • 2cupsmixed spring greens

  • 1cupsliced strawberries

  • 1cupblueberries

  • ½cupcrumbled blue cheese

  • ½cuptoasted walnuts

  • ¼cupolive oil

  • ¼cupbalsamic vinegar

  • ¼cupfresh blueberries

  • 1 ½teaspoonshoney

  • 1 ½teaspoonsDijon mustard

  • salt and ground black pepper to taste

Cooking Directions

  1. Make the salad: Toss spring greens, strawberries, blueberries, blue cheese, and walnuts together in a bowl.

  2. Make the dressing: Blend oil, vinegar, blueberries, honey, and mustard together in a blender until dressing is smooth. Season with salt and black pepper. Pour dressing over salad and toss to coat.

Tips

You can substitute goat cheese for the blue cheese, pecans or almonds for the walnuts, and maple syrup for the honey if desired.
