Ingredients

  • 6zucchini flowers

  • 1cupall-purpose flour

  • 1teaspoonbaking powder

  • 1teaspoonsalt, plus more to taste

  • ½cupmilk

  • 2largeeggs

  • 1teaspoonolive oil

  • 1quart vegetable oil for frying, or as needed

Cooking Directions

  1. Clean zucchini flowers and dry with a paper towel.

  2. Mix flour, baking powder, and salt together in a bowl. Whisk milk, eggs, and olive oil together in a separate bowl; stir in flour mixture until batter is smooth.

  3. Heat vegetable oil in a deep skillet over medium heat.

  4. Working in batches if needed, dip flowers into the batter, then gently place into the hot oil. Fry until golden and crispy, 2 to 5 minutes. Transfer fried flowers to a paper towel-lined plate and season with salt.
