Ingredients

  • 2eggs

  • 4cupsItalian-seasoned bread crumbs

  • 10green tomatoes, sliced 1/2-inch thick

  • 6cupsspaghetti sauce, divided

  • 1(16 ounce) packageshredded mozzarella cheese, divided

  • ½cupgrated Parmesan cheese, divided

  • ½teaspoondried basil

Cooking Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.

  2. Whisk eggs in a small bowl until smooth. Pour bread crumbs into a shallow dish. Dip each tomato slice in egg, then coat with bread crumbs. Arrange in a single layer on the prepared baking sheets.

  3. Bake in the preheated oven until golden, about 5 minutes per side.

  4. Pour 3 cups spaghetti sauce into the bottom of a 9×13-inch baking dish. Top with a layer of tomato slices. Layer with 1/2 of the mozzarella and 1/2 of the Parmesan. Repeat layers with remaining spaghetti sauce, tomatoes, mozzarella, and Parmesan. Sprinkle basil on top.

  5. Bake in the preheated oven until golden brown, about 35 minutes.
