Ingredients

  • 1cupall-purpose flour

  • 1teaspoonsalt

  • 1teaspoonpepper

  • 5green tomatoes, sliced 1/2 inch thick

  • 1cupcrushed saltine crackers

  • 2eggs, beaten

  • ½cupbutter

Cooking Directions

  1. In a small bowl, stir together flour, salt, and pepper. Place crushed saltine crackers in another bowl, and beaten eggs in a third bowl.

  2. Melt butter in a large skillet over medium heat. Dip each tomato slice in egg to coat, then in flour mixture. Dip floured tomato slice back into egg, and then into cracker crumbs.

  3. Place coated tomato slices in the hot skillet. Fry until golden brown on each side, 3 to 5 minutes per side. Add more butter to the pan, if necessary. Serve hot.
