3skinless, boneless chicken breast halves – cut into 1 inch cubes

4button mushrooms, chopped

½teaspoonItalian seasoning

½teaspoonwhite sugar

4cupsuncooked rotini pasta

¼cupgrated Parmesan cheese for topping
Cooking Directions

Heat oil in a large skillet over medium heat. Sauté chicken, onion, and garlic in hot oil until chicken is mostly cooked through, about 10 minutes. Stir in crushed tomatoes, mushrooms, and Italian seasoning. Cook, stirring frequently, for about 5 minutes.

Reduce heat, stir in sugar, and simmer for at least 15 minutes.

Meanwhile, bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain.

Serve rotini topped with chicken mixture and grated Parmesan cheese.
