Ingredients

  • 4cupstomato juice

  • 2cupschopped tomatoes

  • 1onion, minced

  • 1green bell pepper, minced

  • 1cucumber, chopped

  • 2green onions, chopped

  • ¼cupchopped fresh parsley

  • 3tablespoonsfresh lemon juice

  • 2tablespoonsred wine vinegar

  • 1clovegarlic, minced

  • 1teaspoondried tarragon

  • 1teaspoondried basil

  • 1teaspoonwhite sugar

  • salt and pepper to taste

Cooking Directions

  1. Combine tomato juice, tomatoes, onion, bell pepper, cucumber, green onions, parsley, lemon juice, red wine vinegar, garlic, tarragon, basil, sugar, salt, and pepper in a blender or food processor. Blend until well combined but still slightly chunky.

  2. Pour into a serving bowl and cover. Place in the refrigerator to chill before serving, at least 2 hours.
