Ingredients

  • 1 ½cupsall-purpose flour

  • 1teaspoonbaking powder

  • 1teaspoonpumpkin pie spice

  • ¼teaspoonsalt

  • 1cupunsalted butter, softened

  • ½cupbrown sugar

  • ½cupwhite sugar

  • 2largeeggs

  • ½teaspoonorange extract

  • ½teaspoonvanilla extract

  • 2 ½cupsrolled oats

  • 1cupdried cranberries

  • ½cupchopped walnuts

Cooking Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.

  2. Combine flour, baking powder, pumpkin pie spice, and salt in a medium bowl.

  3. Cream butter and both sugars in a large bowl with an electric mixer until smooth. Beat in eggs, vanilla, and both extracts. Gradually mix in flour mixture until incorporated. Mix in oats, cranberries, and walnuts until thoroughly combined. Drop rounded teaspoonfuls of dough 2 inches apart onto the prepared baking sheets.

  4. Bake in the preheated oven until the edges are golden, 8 to 10 minutes. Allow the cookies to cool briefly on the baking sheets before transferring to a wire rack to cool completely.
