1 ½poundsboneless pork, cut into 1 inch cubes

1tablespoonbacon drippings, or vegetable oil

¼cupchopped onion

1(4 ounce) cantomato sauce

2tablespoonschili powder

1teaspooncumin
-
½teaspoongarlic powder

salt and black pepper to taste

3cupswater
Cooking Directions

Place 3 tablespoons flour in a plastic bag. Add pork and shake to lightly coat with flour; set aside.

Heat bacon drippings and vegetable oil in a Dutch oven over medium-high heat. Add pork and cook until meat is evenly browned, about 5 to 8 minutes.

Stir in 1 tablespoon flour; cook and stir for 3 minutes. Stir in onion, tomato sauce, chili powder, cumin, garlic powder, salt, pepper, and water. Bring to a boil; reduce heat to medium-low and simmer until pork is just falling apart, about 1 1/2 to 2 hours.
Tips
This chili is also good served over rice or chili beans.
