Ingredients

  • 2cupschopped, cooked chicken meat

  • 1cupcooked white rice

  • 1(10.75 ounce) can condensed cream of chicken soup

  • cupmayonnaise

  • 2tablespoonsgrated onion

  • ½cupchopped celery

  • 1(8 ounce) cansliced water chestnuts

  • 1tablespoonlemon juice

  • ½cupshredded sharp Cheddar cheese

  • 2cupscrushed potato chips

  • ¼cupwater

  • salt and pepper to taste

Cooking Directions

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. In a large bowl combine the chicken, rice, soup, mayonnaise, onion, celery, water chestnuts, lemon juice, water, salt and pepper. Mix well. Spread this mixture into a lightly greased 9×13 inch baking dish. Cover with cheese, then potato chips. Bake in the preheated oven for 20 to 25 minutes or until the potato chips are lightly browned.
