Ingredients

  • 1poundboneless skinless chicken breast halves, cut into bite-sized chunks

  • 2clovesgarlic, chopped

  • 2tablespoonsolive oil, divided

  • salt and ground black pepper to taste (Optional)

  • 1(12 ounce) bagBirds Eye® Recipe Ready Sliced Zucchini

  • 2tablespoonsgrated Parmesan cheese

  • 1teaspoonchopped Italian parsley, or to taste (Optional)

Cooking Directions

  1. Toss chicken, garlic, 1 tablespoon oil, salt, and pepper in a large bowl.

  2. Preheat a large nonstick skillet over medium-high heat. Add chicken and cook, stirring occasionally, until golden brown on the outside, no longer pink in the center, and the juices run clear, 6 to 8 minutes. Transfer chicken to a plate.

  3. Heat remaining 1 tablespoon oil in the skillet over medium heat. Add zucchini and cook, stirring occasionally, until tender and starting to brown, about 5 minutes. Add chicken and toss until heated through, 2 to 3 minutes. Sprinkle with Parmesan cheese and parsley.
