Cooking Directions

Preheat the oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.

Blend together oat bran, flour, brown sugar, baking powder, baking soda, and salt in a large bowl. Add chilled applesauce, eggs, and oil; mix until well blended. Spoon batter into the prepared muffin cups. Let stand for 10 minutes.

Bake in the preheated oven until golden brown and a toothpick inserted into the center of muffins comes out clean, about 15 minutes.
Variations:
Raisin bran muffins: Fold in 1 cup plumped raisins and 2 tablespoons raisin water into batter before baking.
Cinnamon sugar muffins: Sprinkle a mixture of sugar and cinnamon over tops of muffins before baking.
Spiced muffins: Add 1 teaspoon cinnamon or nutmeg to flour mixture.
