Ingredients

  • 1cupfinely chopped fresh pineapple

  • ½cupdiced red bell pepper

  • ½cupdiced green bell pepper

  • 1cupfrozen corn kernels, thawed

  • 1(15 ounce) canblack beans, drained and rinsed

  • ¼cupchopped onions

  • 2green chile peppers, chopped

  • ¼cuporange juice

  • ¼cupchopped fresh cilantro

  • ½teaspoonground cumin

  • salt and pepper to taste

Cooking Directions

  1. In a large bowl, toss together pineapple, bell peppers, corn, black beans, onions, chile peppers, orange juice, and cilantro. Season with cumin, salt, and pepper. Cover and chill in the refrigerator until ready to serve.
