Ingredients

  • 1 ½poundsfrozen purple hull peas

  • water to cover

  • 8ouncesfresh okra (Optional)

  • 4ouncesbacon, cut into 1/2 inch pieces

  • 1tablespoonwhite sugar

  • 1/8teaspoonbaking soda

  • salt and pepper to taste

Cooking Directions

  1. Place purple hull peas into a large pot; pour in enough cold water to cover peas. Bring to a boil over high heat. Add okra if using and boil for 2 minutes, stirring twice. Reduce heat to medium-low; add bacon, sugar, baking soda, salt, and pepper. Cover and simmer until tender, 1 1/2 to 2 hours.

Recipe Tips

You can use dried peas for this recipe, but you will need to prepare them for cooking according to the package directions.

Black-eyed peas can also be used if purple hull peas are not available.
