Ingredients

  • 1tablespoonbutter

  • ½cupchopped red onion

  • 8ouncescooked pulled pork without sauce, chopped

  • 2leftover baked potatoes, diced

  • ¼teaspoonsalt

  • ¼teaspoonground black pepper

  • teaspooncayenne pepper (Optional)

Cooking Directions

  1. Melt butter in a skillet over medium heat; cook and stir onion in melted butter until slightly softened, about 2 minutes. Add pork and continue to cook for 2 minutes more.

  2. Stir potatoes into pork mixture and toss. Cook until potatoes are browned, stirring occasionally, about 5 minutes. Season with salt, black pepper, and cayenne pepper.

Tips

The hash will brown evenly if you don’t stir it too much. If it seems too dry feel free to add a tablespoon or two of water early in the process.
