This mojo marinade is nice and citrusy — delicious to use on pork, steaks, chicken, or fish before grilling.

Ingredients

  • 6clovesgarlic, coarsely chopped

  • ½cupminced yellow onion

  • 1cupfreshly squeezed orange juice

  • ½cupfreshly squeezed lime juice

  • ¼cupchopped cilantro

  • 1teaspoonkosher salt

  • 1teaspoondried oregano flakes

  • 1teaspoonhot pepper sauce (e.g. Tabasco™)

  • ½teaspoonground cumin

  • ½teaspoonlemon-pepper seasoning

  • ½teaspoonfreshly ground black pepper

  • 1cupolive oil

Cooking Directions

  1. Pulse garlic and onion in a blender until very finely chopped.

  2. Add orange juice, lime juice, cilantro, salt, oregano, hot pepper sauce, cumin, lemon pepper, and black pepper. Blend until thoroughly incorporated.

  3. Pour in olive oil; blend until smooth.

To Use:

Add meat, chicken, or fish and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator. Meat and chicken are best marinated overnight, fish only needs one hour.
