Ingredients

  • 8cupsdiced zucchini

  • 1red bell pepper, chopped

  • 1cupcornflakes cereal

  • 1cupshredded Cheddar cheese

  • ½cupolive oil

  • 1teaspoondried basil

  • 2largeeggs, beaten

  • salt and pepper to taste

Cooking Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly oil a 9×13-inch baking dish.

  2. Combine zucchini, bell pepper, cornflakes, cheese, oil, basil, and eggs in a large bowl. Season with salt and pepper to taste. Spread evenly into the prepared baking dish.

  3. Bake in the preheated oven until top is golden brown, about 45 minutes.
