Ingredients

  • 2zucchini, quartered and sliced

  • 1onion, sliced into rings

  • ½cupall-purpose flour

  • ½cupcornmeal

  • ½teaspoonsalt

  • ½teaspoonground black pepper

  • ¼teaspoongarlic powder

  • 1cupvegetable oil for frying

Cooking Directions

  1. Combine zucchini and onion in a large bowl.

  2. Mix together flour, cornmeal, salt, pepper, and garlic powder in a small bowl until well combined.

  3. Pour flour mixture over zucchini mixture; cover the bowl and shake until vegetables are well coated. Let mixture sit until a batter forms on vegetables, about 30 minutes.

  4. Heat oil in a medium skillet over medium heat. Fry vegetables in hot oil until golden brown, turning to cook evenly.
